| All these principles are applied at the Viret winery together with the more conventional methods of vine growing and vineyard control, namely ploughing, sowing grass, qualitative training, and green agriculture. Everything has been set up to recreate a true biotope where the vine ia able to defend itself naturally through the use of a powerful immune system which fights naturally against the pathogenes frequently encountered in viticulture.
The result of this practice can be found in the quality of the raw material (the vintage). The grape must be healthy and natural (the issue of natural growth in pure, unadulterated soil) in order to maintain a method of vinification which depends on the least possible amount of interventions, and which forbids the addition of oenological products, with an aim of offering an authentic, natural and living wine, a true reflection of the forgotten savours of the soil. |
